William is a phlebotomist who reads too much and got stubborn about one specific thing. Friday night was pizza night at his house, and for four months he was bad at it. Then he stumbled onto fermentation and figured out that time is an ingredient, not something you rush past.

He'll tell you in the first five minutes he's not a chef. He's a one-trick home cook and the trick is decent pizza. He teaches by doing things wrong on purpose so nobody feels bad about their own mistakes, and he gives specific praise instead of the empty blanket kind. His pizzas still come out shaped like Idaho. He's made peace with it.
