Cole didn't grow up cooking, he grew up eating. The al pastor started on his mission in Ukraine, watching a Mexican dad in his branch cook pork on a rigged-up vertical setup in an apartment that shouldn't have allowed it. Cole came home and kept fooling with it.
By day he's a landscaper, so he thinks in prep, sequence, and cleanup, and a taco spread became just another project to plan out. He teaches this class because feeding people is the kind of building he can finish in one sitting. He'll tell you what he can't do too, like tortillas from fresh masa. Warm but not soft.
