Cold Dough, Cool Room: Dealing With Utah Dry Air and Elevation
Okay so, this is the lesson where I finally admit that living up here works against us a little. Not a lot. But enough that if nobody tells you, you'll blame yourself for stuff that's actually just the climate.
Here's the thing. Recipes for laminated dough get written by people at sea level, in kitchens that aren't bone dry. Utah County sits around 4,600 feet, and our air has basically no humidity in it most of the year. Both of those things mess with pastry in specific, predictable ways. Once you know what to expect, you can just plan around it instead of fighting it every time.
What dry air actually does
Dry air pulls moisture out of your dough fast. Butter block, detrempe, finished croissants proofing on the counter, all of it. If you've ever had a dough skin over while you were just standing there reading the next step, that's not you being slow. That's American Fork air doing what it does.
A skin isn't the end of the world, but it does mean tougher spots and uneven baking later. So:
- Cover dough with plastic wrap pressed right against the surface anytime it's resting, even for ten minutes on the counter.
- If you're proofing shaped croissants, don't just leave them out uncovered under a towel and walk away. A towel alone doesn't stop dry air, it just slows it down a little.
- Keep a damp towel over your mixing bowl if you're stepping away mid-recipe for any real length of time.
What elevation does
Elevation mostly affects baking, not so much the lamination part. Lower air pressure up here means liquids evaporate faster and things brown quicker than a recipe expects. So a croissant that's supposed to take 18 minutes at sea level might be done, or getting close, at 14 or 15 here.
My opinion, and I'll say it flat: I'd rather you pull something a touch early and check than trust a recipe written for a kitchen at sea level. Underbaked you can fix by tossing it back in for two more minutes. Overbaked, dried out, too dark on the bottom, there's no fixing that. Start checking early, every time, until you've got a feel for your own oven.
Cold dough matters more here, not less
I've said it before and I'll keep saying it: butter temperature is basically everything in lamination. In dry heat, that gets harder to manage, because your kitchen air is actively working to warm things up and dry them out at the same time.
This is where I've got to admit something. I tried laminating one July with the AC struggling to keep up, and the butter just gave up on me completely. Went from workable to greasy soup between folds. I hadn't checked the house temperature before I started, I just assumed my kitchen was fine because it always had been. It wasn't. Now I check the thermostat before I even pull the butter out of the fridge. If my kitchen's running warm, I know I'm going to need extra fridge rests between every single fold, no exceptions, and I plan the whole session around that instead of getting surprised by it halfway through.
So, practical version of that lesson:
- Check your kitchen temperature before you start, not after things go wrong.
- If it's warm (summer, oven's been on, whatever), plan on longer rests in the fridge between folds. Don't rush because you're impatient. That's the actual number one thing that ruins home lamination, more than any fold technique.
- If your butter starts looking shiny or greasy at the edges while you're rolling, stop. Fridge, ten minutes, no arguing with yourself about it.
A note on water
Hard water is its own thing here, and if you're making pastry cream or a simple syrup and using tap water, you might notice a slightly different result than a recipe expects, especially with something delicate. It's usually not enough to matter for what we're doing in this class. I mention it mostly so if something looks a little off and you can't figure out why, that's one more variable in the list, not a sign you did something wrong.
Bottom line for this lesson
Cover your dough. Check your kitchen temp before you start, not mid-project. Trust your eyes on baking time over the clock on the recipe. None of this is complicated, it's just stuff nobody tells you until you've already ruined a batch of butter finding it out yourself, which is basically how I learned everything in this class.
